As a 100% natural product, colour and flavour naturally evolve with each seasonal harvest:

Lighter Jar (Spring / Early Summer): Pale gold with a delicate, floral profile from early blossoms; naturally tends to a soft set.

Darker Jar (High Summer): Deeper amber with a bolder, more aromatic profile, led by high-summer lime blossom and a fresh, herbaceous finish.
